Organic Coffee Production requires that producers follow stringent organic standards as set forth by their certifying body. This is imperative in order to produce a high quality crop and to meet all certification requirements. Furthermore, organic coffee production protects and furthers traditional agriculture, building on centuries old knowledge of sustainable farming in a way that protects nature.

One of the key requirements of Organic Coffee Production is to improve and maintain soil fertility through composting. Much of the cherries and husks removed from the beans at harvest time are retained and composted in order to create a rich, healthy medium with which coffee plantations are fertilized with. Other natural methods such as the planting of legumes and other nitrogen-fixing plants are employed, as is the application of “green” or composted animal manures.
